Rildok is an authentic traditional Sherpa dish made from potato. Boiled potatoes are traditionally smashed in large wooden mortar and pestle with little salt and yak butter until it forms sticky dough, then made into small balls, and served with fresh achaar or soup.
Ingredients Quantity
Boiled Potato 200 gm
Chopped Onion 50 gm
Garlic Paste 1 tea spoon
Salt as per taste preference
Peppercorn powder as per taste preference
Chilly powder & paste 1/2 tea spoon each
Chicken Stock 500 ml
Fresh Herbs for garnishing
(Spring onion, corriander )
Starch 2 - 3 table spoon
Method
For Potato rounding :-
1. Mash the boiled potato hard, and sprinkle salt, butter for taste
2. Greese a palm with oil & make roundings 20 -30 gm each
For Soup:-
1. Heat oil in a pan
2. After the oil is heated, put the chopped onion, garlic paste and stir it until the onion is golden brown. Make sure the onion is fried in medium heat.
3. Add starch after it starts boiling to get the right consistency.
